Bacon Weave Turtle (Fatties) and Animals

This is one of our signature recipes having being featured on KTLA-5 and won an award in the Canadian Championships in the Anything Butt category.

It’s a kid friendly recipe and you can get kids involved to make a stegosaurus, triceratops, millipede, etc.

Ingredients
  • 1 pound Jimmy Dean Pork Sausage, Regular
  • 1 pound Jimmy Dean Pork Sausage, Hot
  • 1 Pkg Hot Dogs
  • 16 oz Regular Bacon (don't use thick version)
  • 2 tablespoons SYD Rub
  • Cayenne Pepper (optional)
  • BBQ Sauce
Instructions
  1. Mix your favorite BBQ rub or SYD Competition Rub, about 2 tbs into 2 lb of the regular and hot sausage.
  2. Add some cayenne pepper if you like spicy.
  3. Add a couple squirts of your favorite BBQ sauce
  4. Mix thoroughly with your gloved fingers.
  5. Mound into the shape of the turtle body onto a sheet of foil or parchment paper.
  6. Lay out 5 strips of bacon (#1 to #5) parallel to each other on a sheet of foil or parchment paper.
  7. Weave the 6th strip 90 degrees to #1 – #5. It’s easy if you start from left to right and lift each of the #1 to #5 strips as you lay down the 6th, 7th, 8th, 9th, and 10th strip.
  8. Pick up the foil and then flip the bacon weave and drape it over your sausage mound.
  9. Tuck excess bacon under the turtle body.
  10. Trim hot dogs for 4 legs, head, and conical tail.
  11. Make cuts for toes and mouth. Smoke 250-300 degrees for 1 hour until internal temp is 170 degrees.
  12. Cover with foil if it is too dark.
  13. Brush with your favorite BBQ sauce and let sauce set for 5 mins.
  14. Garnish with parsley and enjoy!
  15. You can add cheese, jalapenos, hard boiled eggs, olives, chopped onions, bread crumbs, etc. to make the turtle your very own concoction!

    This is absolutely wonderful. I cannot wait to make this for my kids. I have no imagination but would love to know how to make the dinosaurs and millipede.. Maybe I will find it when I google lol. The turtle looks wonderful and my kids are going to go nuts when they see this. Hopefully I can be creative enough to come up with a Bunny for Easter!!

      Hey Tracy:
      You can make a Triceratops by putting three short hotdog "horns" on front "head" your bacon wrapped Fatty body.
      You can make a Brontosaurus by putting a series of short hotdog "spines" on a dinosaur shaped Fatty body
      You can make a millipede by sticking several short hotdog "legs" on the side of a log-shaped Fatty body.

    Thank you. I actually have the stuff on my counter now and I am going to attempt the turtles. lol I will send pictures when I do make the other ones as I am positive this is going to be a hit!
