Despite the 104 degrees in the shade, another 14 students had a great time at the Slap Yo’ Daddy BBQ 101 Pitmaster Class conducted in Diamond Bar, California.   Everyone donned their souvenir Slap Yo’ Daddy aprons, put on disposable gloves, and gained hands-on experience preparing the meats, making the top secret Slap Yo Daddy rub and sauce, and cooking chicken thighs, half chicken, St. Louis spares, rib tips, spareribs, baby-backs, tri-tip, hot links and sausages, pork butt, and beef brisket.  The class also learned how to make two classic sides: coleslaw and BBQ beans.  The coleslaw dressing was made from scratch, tossed in the shredded cabbage, and served fresh like a garden salad. The beans were seasoned and slow cooked until tender perfection.

By 12:30 pm, all the meats and sides were ready for sampling and the class was treated to headcook Harry’s famous Seared Ahi Tuna with Maui Onion Dressing appetizer as a prelude to the hugh sleep-inducing lunch which followed.  Everyone tried all the different meats and learned the fine details of competition BBQ tasting including sampling the difference between the “point” of the brisket versus the”flat”  portion, the taste and texture of the sparerib versus the baby back rib, and so on.

The class conc luded with a frameable certificate and several students obtained Harry’s autograph on the aprons they received.  One student even wanted a BBQ sauce thumb-print on his certificate to prove authenticity he attended the class in person!   Everyone went home with lots of leftovers enough for another meal and for their familes to taste the awesome BBQ they had cooked themselves.

After turing in 13 box submissions over Sat and Sun, we were relieved that the triple KCBS West Coast BBQ Championship in Fairfield, CA, was finally over.  I thought the April Stagecoach 1,2,3 was tough and Fairfield was comparable except we didn’t have extra team members. Congrats to Hogs for your double GC and RnQ for your 7th GC and Jack Draw! Congrats to Brazen for another RGC and sealing their ROY 2009! I am certain those great guys from Brazen are only a hair away from their first GC.

Congrats to all the teams to took a walk. For those new teams I met, I wish you all the best and hope you will continue your BBQ journey. Hope everyone found the KCBS box clinic on Saturday morning useful. Thanks very much to those who joined the CBBQA in Fairfield.

1st Place Ribs in Vista Smokin Q Classic August 2009

Championship BBQ samples for the public at Vista, CA

We won 1st place in Ribs, 2nd in Pork, and 6th overall at the KCBS-sanctioned First Annual Vista Smokin Q Classic State Championship.   Vista is a beautiful city about 10 miles inland from the seaside city of Oceanside in San Diego county.  There were 27 teams who showed up including half dozen of the best from Arizona eager to win a Jack Daniels Invitational Draw should they win Grand Champion.   Grand Champion honors went to our friends Bill and Dan from Tropical Heat, a couple of great guys who also, like me, work in the water utility business.  Reserve was won by Vince and Alexa from Rhythm ‘n QUE from Phoenix, AZ.

Mark and I had a couple of junior helpers Jacob and Steven who are family friends enjoying their summer vacation out of school.  We promptly put them to dish washing and cleaning duties and put them through their paces making boxes and seasoning the meats!

Everyone had a great time and the two young un’ got a taste of championship BBQ including taking a couple of walks with us!

We had a fun time and it’s always good to see everyone and catch up on what’s happening.  The Ahi Tuna and BBQ Spaghetti potluck dishes on Friday were enjoyed by many.

A big thank you to our fellow CBBQA members Larry Schroeder and Dale Ginos for putting on a great event!  We’re grateful that you and your helpers, judges, sponsors, hosts, and volunteers who put in so much effort to “give” back to the BBQ community and public by hosting this awesome event.  Kudos for a well run and well thought out event.  Thanks also to Kelly and Kathleen for officiating.

Special mention goes to Rock’s Bar-B-Que who provided the temperature control systems we use on our Weber smokers.  They allow us to focus on the contest instead of constantly having to fiddle with vents to ensure constant cooking temps.  John Jackson is a BBQ aficionado himself and he’s happy to help you figure what Stoker ensemble will work best for your BBQ rig.

In summary, we enjoyed ourselves immensely and will be back next year.    We’re headed to Maui on Tues for a week of much needed R&R.  I’ll be sporting a tan when I see everyone at the triple-KCBS contest in Fairfield in two weeks.  Lomi Lomi Salmon, Kahlua Pig, and Poi here I come!
