Mini Bacon Frittata

Since my last couple of bacon wrapped recipes were extremely popular (pineapple mozzarella rings and turkey lollipop), here’s a super easy breakfast or brunch bacon dish you can make in 20 minutes.

This bacon recipe joins my many bacon musings including apple pie, meatloaf, breakfast fatty, buffalo turds, pig candy, and even bacon-weave animals. I added some cooked breakfast sausage and grated cheese in this version. Don’t be shy to incorporate anything you like including bell peppers, mushrooms, spinach, onions, and anything you want in a frittata which is really a baked open-face omelet.

This is a simple enough dish for the little ones to make for Mothers Day or Fathers Day. You can even replace the bacon with ham, add some green food coloring, and call it Green Eggs and Ham. Have fun with it. I served it during my last couple of classes and they were a hit with my students. Yes, my poor students are often guinea pigs for my bacon wanderings. I think they love it though!
