As a competition cook and instructor, I have a lot of pork butt in my fridge. One of the easiest and delicious ways to cook butts is to use my favorite electric pressure cooker; the Instapot. It will make mouthwatering tender pork in about 40 minutes. Try this simple recipe the next time you have a craving for some Chili Pork Verde. Enjoy.

Ingredients

Units Scale
  • 1 boneless pork butt (about 7 lbs), cut into 2-inch chunks
  • 5 tablespoons ground cumin
  • 1 tablespoon white pepper
  • Slap Yo Daddy All Purpose rub to taste, or salt and pepper
  • 2 Jalapenos, chopped
  • 1 Poblano chili, chopped
  • 1 onion, chopped
  • 1 head garlic, chopped
  • 1 lb small green tomatillos
  • 1 bunch cilantro, chopped

Instructions

  1. Turn Instapot on to Sauté setting. Brown the pork butt chunks
  2. Add the dry seasonings and chopped fresh ingredients
  3. Cook on High Pressure for 40 minutes
  4. Cool, depressurize, and remove cooked meat carefully to not break it up too much.
  5. Puree the liquid using a propeller blender. Boil until liquid thickens to the consistency you like
  6. Garnish with cilantro and serve. Goes well with some tortillas
