Since my last couple of bacon wrapped recipes were extremely popular (pineapple mozzarella rings and turkey lollipop), here’s a super easy breakfast or brunch bacon dish you can make in 20 minutes.

This bacon recipe joins my many bacon musings including apple pie, meatloaf, breakfast fatty, buffalo turds, pig candy, and even bacon-weave animals. I added some cooked breakfast sausage and grated cheese in this version. Don’t be shy to incorporate anything you like including bell peppers, mushrooms, spinach, onions, and anything you want in a frittata which is really a baked open-face omelet.

This is a simple enough dish for the little ones to make for Mother’s Day or Father’s Day. You can even replace the bacon with ham, add some green food coloring, and call it Green Eggs and Ham. Have fun with it. I served it during my last couple of classes and they were a hit with my students. Yes, my poor students are often guinea pigs for my bacon wanderings. I think they love it though!

Ingredients

Units Scale
  • Bacon, one slice per Frittata
  • Eggs – 1 egg per Frittata
  • Cooked Breakfast Sausage, diced
  • 1 cup grated cheddar
  • 1/2 cup whole milk
  • Non-stick spray
  • Italian parsley, chopped
  • Cherry tomato, cut into half
  • SYD Rub or Salt and Pepper

Instructions

  1. Beat eggs in bowl
  2. Add 1 TBS milk per egg
  3. Add SYD Rub or salt and pepper to taste
  4. Spray muffin pan with non-stick spray
  5. Line one slice of bacon around the edge of muffin mold. Press into the side walls
  6. Fill about 3/4 way (about 1 egg per mold)
  7. Cook some sausage (or mushroom, spinach, bell pepper, bacon bits, etc.). Cut into small dice
  8. Add 1 TBS grated cheese. Stir
  9. Add some cooked sausage
  10. Add more cheese
  11. Cook in 400F oven until done; about 20-25 mins
  12. About halfway though, put in the half cherry tomato once the top of the frittata is firm
  13. Garnish with parsley leaf or chopped Italian parsley
